From Tom: "Years ago I tasted my first triple-ginger cookie—it was filled with intense gingerness. When I started exploring local Hawaiian flavors, ginger was the first go-to ingredient that came to my mind. Remembering my love of intense ginger, I set about to create something better. And not wanting to stop with just ginger, I began experimenting with coconut, macadamia, and raw turbinado sugar, which adds a rich caramel flavor without being overly sweet. The result is our Ginger Macadamia Butter Cookies. Try one for the first time—just when you think this a pretty good cookie, the spicy bits of candied ginger hits your mouth with a resounding “Wow!”
Pairing: Pairs well with a nice light dry white wine.
